the food industry.
Anxiety runs high during the fi rst
few weeks of service and mistakes
are naturally made. From those early
experiences a team forms in the front
of the house that increasingly gains
confi dence and is able to fi nish service
towards the end of the semester in an
almost flawless manner. We learn by
doing at the Leis Family Class Act, and
you, as our guest, become our instructors.
The guest comment card you complete
at the end of your meal is reviewed
immediately after every service and is vital
to our service education. Please do not
sugar coat your evaluation. Be critical to
the 11th degree. This is your chance to
be a food and restaurant critic. Compare
your dining experience that you had today
at the Leis Family Class Act Restaurant
with any fine dining experience that you
have had in the past. If we fall short in
any way, please let us know. If we have
exceeded your expectations please go nuts
with your praise. Your honesty is critically
important to our education and to your
